Uses
Paltita avocado oil’s culinary uses are multiple: for dressings, for frying meat and fish, to accompany salads, vegetables and carpaccios, etc. Thanks to its very high smoke point, around 255º C, it can be used for frying at very high temperatures.
However, we recommend using the oil accompanying foods that are not too greasy or foods that contain not too many proteins. Its fineness and delicacy, without being bitter nor sharp, will enhance the taste and properties of the food we are using.
Avocado oil is and ideal combination with vegetables, white fish, cold soups, salsas and emulsions, fried vegetables, and especially fruits and deserts of bitter chocolate. To summarize, it is a new product that tickles the imagination and invites to create combinations and new dishes.

In 2005 Aconcagua Oil & Extract was created by a couple of young foreign residents in Chile, with the objective to produce the best extra virgin avocado oil under the brand name Paltita. Chile is one of the largest avocado producers in the world and it is the Aconcagua Valley where the country’s main avocado plantations are located. In this valley, with a magnificent view over the Andes mountains and in between avocado plantations, the processing plant is situated in San Esteban, only 80 kms north of Santiago. The extraction process takes place in a typical Chilean country house with thick adobe walls and employing state-of-the-art technology. The avocados are purchased from farmers in the valley and selected before they are pressed. The first step is to remove the skin and stone from the fruit. Then, similar to olive oil extraction, the fruit is fed into a malaxer where the oil is liberated and allowed time to agglomerate in droplets. Next, in a decanter the oil is separated from the pulp and subsequently kept in stainless steel tanks under inert atmosphere. Eventually it is filtered, bottled and shipped to all over the world.
